    Gurian khachapuri or gvezeli in Georgia

    Guri district in western Georgia is famous for its own khachapuri recipe, the aroma and rich taste of which cannot be overlooked. Georgian khachapuri is a unique monument of intangible heritage, so every traveler is obliged to try national pastries during the trip!

    Initially, khachapuri was popular only in the mountainous regions of northwestern Georgia, because there was not enough time for workers to have a full lunch, and a flatbread with cheese and egg was perfect for a quick and satisfying snack. Later, the baking recipe spread throughout the country, and the dish was served in various interpretations in many cafes and restaurants.

    The name of the dish stands for “hacha” and “puri”, which in Russian means “cottage cheese” and “bread”, denoting the main ingredients. Gurian khachapuri is also called gvezeli.

    The features of khachapuri in Gurian consist in the method of preparation. First of all, the cooks knead the yeast dough, which should be the most elastic and soft. For the filling, suluguni cheese and chicken eggs are used, after which the pie is shaped like a crescent and baked in the oven.

    It is best to serve Gurian khachapuri hot. The dish goes well with rich red wine, tea and sweet tea.
